We have a bunch of chocolatey stuff in the house right now (I just made 5lbs of Great Grandma Ida's fudge last week), but I was craving something different for dessert. Cinnamon apples to the rescue! These are a snap to make, and require only a few basic ingredients. They'd be yummy over ice cream, or with pancakes, but I like to eat them just as they are.
1 to 2 T unsalted butter
1 large apple, peeled, cored, and sliced
2 T brown sugar
a pinch of cinnamon to taste
Melt butter in a small skillet over medium-low heat. Toss in apple slices, and cook until slightly softened (3 to 5 minutes or so). Mix in brown sugar and cinnamon, and raise heat slightly. Cook for 5 to 7 more minutes, stirring occasionally. Serve and sprinkle with more cinnamon if desired.
